    Heat oil in a wok until smoking.

    Stir-fry the beef in batches until browned. Set aside.

    Add broccoli, peppers, and courgette. Stir-fry for 3-4 minutes.

    Return beef, add soy sauce, ginger, and garlic. Toss for 1 minute.
