Vegetable Stir Fry (Arborio Rice)
Quick vegetarian lunch stir fry. Uses Arborio rice which gives a slightly stickier, creamier result than long grain.
Ingredients
- Arborio rice
- cabbage, shredded
- eggs (scrambled into the stir fry)
- soy sauce
- sesame oil (if available)
- garlic
- any other veg to hand — peppers, spring onions, peas, sweetcorn, carrots
Method

Cook Arborio rice, drain, and set aside (or use leftover rice)

Heat oil in a wok or large frying pan

Stir fry garlic briefly, then add cabbage and any harder veg first

Push veg to the side, scramble eggs in the space

Add rice and toss everything together

Season with soy sauce (and sesame oil if using)

Serve immediately
Notes
First made 24 Feb 2026 — no meat, just veg and egg. Arborio rice works surprisingly well for stir fry — stickier than basmati. Quantities and exact veg TBC next time we make it — this was a "whatever's in the fridge" job.
