    Beat the eggs with a pinch of salt and pepper.

    Heat a knob of butter in a non-stick pan over medium heat.

    Pour in the eggs, swirl to cover the pan.

    When mostly set, scatter the cheese over one half, fold and serve.

Notes

Add ham, mushrooms, peppers, or tomato as you like. All low-carb.
